This is session #2 for the side of grass fed beef we purchased.
The short ribs have been aging for approximately 45 days.
We're now using it for burger blend.
People on the guest list for the Tomahawk steak night shall be given priority to this event.
I'll open it up to a public guest list if there are any spots left.
Burgers will be a simpler style as per chef's choice to best highlight the beef.
Fries will be house-made, double fried in tallow
